Vegan Chia Chocolate Pudding

Ingredients
Coconut Milk - 1/2 cup
Unsweetened Vanilla Almond Milk - 1 cup
Chia Seeds (whole) - 1/2 cup
Unsweetened Cocoa Powder - 2 tablespoons
Erythritol - 1 tablespoon
Stevia - 5-6 drops
For Garnish (optional)
Nuts - Pecans
Keto-friendly chocolate - Lily’s
Coconut Flakes
Directions:
In a mason jar, or any container with a lid add coconut milk (from can).
Add unsweetened vanilla almond milk.
Add chia seeds (whole).
Add unsweetened cocoa powder and erythritol.
Add stevia.
Shake or mix well.
Let set overnight or for at least 5-6 hours.
Garnish with coconut flakes, nuts, or keto-friendly vegan chocolate (we used Lily’s for this recipe).
