Keto Snickerdoodles

Ingredients
- 3/4 cup / 92 g coconut flour
- 3/4 cup / 72 g almond flour
- ½ cup / 56 g powdered monk fruit sweetener
- 6 Tbsp / 84 g butter, softened
- 1 large egg
- 2 tsp vanilla extract
- ½ tsp cinnamon
- 1 Tbsp golden monk fruit sweetener
Directions:

Preheat oven to 350 degrees F / 177 degrees C.

In a medium bowl mix coconut flour, almond flour, monk fruit sweetener and butter.

Mix butter into dry ingredients with hands until incorporated and no bits of butter are noticeable, about 5 minutes.

Add egg and vanilla extract and mix with a rubber spatula to make a smooth, sticky dough.

In a small bowl, add cinnamon and golden monk fruit sweetener. Stir to combine.

Scoop 18 equal tablespoon-sized portions of dough. Add dough portions to cinnamon sugar mixture and toss to generously coat. Lightly press by hand to adhere the cinnamon sugar to the dough.

Place dough on parchment-lined baking tray and flatten center with a teaspoon. Pat dough gently down to smooth rough edges.

Bake 9 to 12 minutes until the center does not appear sandy. When ready, the edges of the cookies will be set and the cookies will appear light-brown in color.

Cool for 5 minutes. Enjoy.
