Ingredients
Mozzarella Cheese - 3 1/2 cups
Cream Cheese - 4 ounces
Coconut Flour - 1 cup - you could also use almond flour
Eggs - 4 large, beaten
Spices - onion powder, garlic powder, parsley, oregano, basil - you can be creative
Directions:
1. Preheat oven to 400 degrees.
2. In a bowl, combine mozzarella cheese and cream cheese. Melt down, this should take about 1 minute in the microwave. Use a double boiler to avoid using the microwave. This will form a dough-like mixture.
3. In a separate bowl, beat 4 eggs. Add spices. Add almond flour. Mix well.
4. Combine cheese mixutre with almond flour mixture. Knead until mix into one consistent dough. If it gets too sticky, you can add more coconut flour or almond flour.
5. Place dough on parchment paper. Cover with another piece of parchment paper. With a rolling pin or something of the same shape, roll out dough to about 1/4 inch.
6. Make into calzones, pizza pockets, or anything that you want! Be careful not to overstuff, they can get messy.
7. Bake for 15-20 minutes until golden brown.
