Per serving: 371 calories, 19 g protein, 8 g carbohydrates, 25 g fat

Ingredients

28 oz canned artichokes, drained

¾ cup heavy whipping cream

¼ cup lemon juice, freshly squeezed

1½ cups Parmesan cheese, grated

1 tsp black pepper, ground

1 Tbsp fresh thyme

Directions:

  1. Preheat oven to 350 degrees F / 176 degrees C.

  2. Place artichokes in a baking pan, then pour heavy cream over them.

  3. Add fresh lemon juice and sprinkle Parmesan evenly on top.

  4. Top with thyme and black pepper.

  5. Bake for 25 to 30 minutes or until golden brown and the sauce has thickened.

  6. Serve Lemon Cream Artichokes hot.

Recipe tips:

  • Drain the canned artichokes well before adding them to the baking pan to avoid a soggy texture.

  • You can substitute the heavy whipping cream with coconut cream or almond milk.

  • For a sharper flavor, add lemon zest and garlic cloves to the dish before baking.

  • Frozen artichoke hearts can also be used in this recipe, but they must be thawed and drained well before baking.

  • Add cream cheese or sour cream to the recipe for a creamier texture.

  • Avoid canned marinated artichokes, as their oily texture can prevent the sauce from thickening properly.

This simple yet flavorful side dish is the perfect addition to any keto meal.

Choosing an artichoke

Health benefits of artichokes

Artichokes are part of the thistle family and have been used in traditional medicine for centuries.

Research published in Nutritional Composition and Antioxidant Properties of Fruits and Vegetables found that artichokes have many health benefits, including supporting liver function and balancing cholesterol while offering antibacterial and anti-inflammatory properties.

"Artichokes support liver health by promoting bile production, aiding digestion, and detoxifying the liver," explains Dr. Berg. "Various phytonutrients in artichokes are powerful antioxidants that protect the liver from harmful by-products of detoxification processes."

They're also a rich source of vitamins C and K, folic acid, magnesium, potassium, and dietary fiber. These nutrients help boost the immune system, enhance cardiovascular health, and strengthen bones.
