Ingredients
Almond Flour - 1 cup
Coconut Flour - 1/2 cup
Eggs- 6 large
Butter - 4 tablespoons - at room temperature
Baking Powder - 1 tablespoon
Cream of Tartar - 1/4 teaspoon
Salt - pinch
Directions:
1. Preheat oven to 350 degrees.
2. Separate egg yolks from egg whites.
3. With an electric mixer, beat egg whites and cream of tartar. Beat egg whites until it forms a stiff peak.
4. In a food processor or blender, combine almond flour, egg yolks, butter, and baking powder.
5. Place almond/coconut flour mixture in a large bowl. In small batches, gently fold egg white mixture into almond/coconut flour mixture. Once fully incorporated, bake in a loaf pan for 30-35 mins. Parchment paper works great because you can just pull the bread out of the loaf pan without having to worry about sticking or clean up!
