Keto Bacon-Wrapped Cauliflower

Total Time: 1 hour, including time for baking

Serves: 6

Per serving: 122 calories, 5 g protein, 2 g carbohydrates, 11 g fat

Ingredients

  • 6 strips center cut bacon
  • 6 medium cauliflower florets
  • 1 Tbsp butter, melted
  • 1 tsp sea salt

Directions:

  1. Preheat oven to 350 degrees F / 177 degrees C.

  2. Line a baking tray with parchment. Place slices of bacon onto tray. Set aside.

  3. Fill a medium pot halfway with water. Bring water to a boil over medium heat. Add cauliflower to water and boil 5 to 8 minutes until slightly tender. Remove florets from water and place into a medium sized bowl.

  4. Add butter and sea salt to cauliflower. Toss to coat cauliflower with butter and sea salt.

  5. Wrap each seasoned cauliflower floret with a strip of bacon, stretching bacon as needed to cover cauliflower. Some cauliflower can be exposed. Place bacon-wrapped florets in a glass baking dish.

  6. Bake 35 to 40 minutes until bacon is browned and slightly crisp.

  7. Cool 3 minutes before serving.
