Ingredients

2 cups cauliflower, finely grated 

2½ cups organic mozzarella cheese, shredded

2 large eggs

½ cup low-carb tomato sauce 

Directions:

  1. Preheat oven to 450 degrees F / 232 degrees C.

  2. Place parchment paper on baking sheet or use nonstick pizza pan.

  3. Combine cauliflower, two cups of mozzarella cheese, and eggs in medium bowl. Mix well until thoroughly combined.

  4. Spread cauliflower pizza dough onto parchment paper and shape into round crust, about half an inch thick.   

  5. Bake in oven for 15 minutes or until edges are golden brown. 

  6. Remove from oven, then top with tomato sauce and remaining mozzarella cheese.

  7. Return to oven and bake for 10 to 15 minutes, until cheese is melted and bubbly. 

  8. Let cool for 5 to 10 minutes before slicing and serving.
