Ingredients:
2 lbs organic chicken breast
3 Tbsp olive oil
1½ cups heavy cream
¾ cup chicken broth
1½ tsp garlic powder
2 tsp Italian seasoning
¾ cup parmesan cheese
1½ cups chopped spinach
¾ cup chopped sun-dried tomatoes
½ tsp salt
Freshly ground black pepper
Instructions:
Heat olive oil in a large pan over medium-high heat and add the chicken.
Season with salt and pepper and cook for 5 minutes on each side until golden brown.
Set chicken aside.
In the same pan, add cream, broth, spices and cheese, and mix well for 3 to 5 minutes.
Add the sun-dried tomatoes and chicken and simmer for about 10 to 15 minutes.
Remove from heat and add spinach.
Cover the pan with a lid and wilt the spinach for about a minute.
