Keto Tuscan Chicken Recipe

KETO TUSCAN CHICKEN 

This is a super simple recipe that's creamy and so tasty. It's a little salty and a little sweet, but keto-friendly all the way. We think you're going to love it.  This keto recipe has sun-dried tomatoes, which is one of Karen's all-time favorite ingredients. It also has spinach, heavy cream, parmesan, and more. It's a very tasty combination, and the sun-dried tomatoes really give it that something extra. Let's say you just have some chicken in the refrigerator, but you're tired of the same old same old, this is a fantastic keto recipe to have. It's easy to get busy and default to the same recipes you always make. This is a tasty and easy way to mix things up. 

Ingredients:

  • 2 lbs organic chicken breast 

  • 3 Tbsp olive oil 

  • 1½ cups heavy cream

  • ¾ cup chicken broth

  • 1½ tsp garlic powder

  • 2 tsp Italian seasoning 

  • ¾ cup parmesan cheese

  • 1½ cups chopped spinach

  • ¾ cup chopped sun-dried tomatoes 

  • ½ tsp salt 

  • Freshly ground black pepper

Instructions:

Heat olive oil in a large pan over medium-high heat and add the chicken. 

Season with salt and pepper and cook for 5 minutes on each side until golden brown. 

Set chicken aside. 

In the same pan, add cream, broth, spices and cheese, and mix well for 3 to 5 minutes. 

Add the sun-dried tomatoes and chicken and simmer for about 10 to 15 minutes. 

Remove from heat and add spinach. 

Cover the pan with a lid and wilt the spinach for about a minute. 

Serve and enjoy!
