This is an arugula based salad. Arugula is one of Karen's favorite foods, and we both think you're going to love this keto recipe. This is a really beautiful salad that's light and super tasty. If you don't like red beets, you really should still give this recipe a try. Golden beets seem to be much milder in flavor. Even your kids may enjoy golden beets. Beets are great for the gallbladder and for the liver. The difference in color means they have different properties of phytonutrients. Some people may say they have too much sugar, but if you just have a small amount, the amount of sugar is nothing to worry about.
Ingredients:
4 to 5 oz arugula
½ cup steamed golden beets
3 oz crumbled feta cheese
3 Tbsp chopped parsley
Salt and pepper
Olive oil and balsamic vinegar (or your favorite keto dressing)
1 green onion, chopped
Instructions:
Combine arugula, feta, beets and parsley in a big bowl.
Season with salt and pepper to taste.
Top with a light drizzle of olive oil and balsamic, or your favorite keto salad dressing!
