Consuming plenty of vegetables is so important. I encourage people to eat 7-10 cups of vegetables per day to get the nutrients they need. But, it can be hard to figure out how to switch things up, so you don't get bored with salad. There is actually so much you can do with salad, and this recipe is proof.
This unique keto-friendly salad is delicious and packed with nutrients. The nutrients aren't just in the vegetables, either. The cheese is loaded with vitamin A, B vitamins, and iron. Halloumi cheese is also either from goats or sheep, which is a lot better on the digestive system.
Halloumi is a salty type of cheese that adds a fantastic flavor. If you've never had fried halloumi before, you really have to try this keto recipe.
Ingredients
8 oz. halloumi, sliced
2 tbsp olive oil
12 oz. grape tomatoes
¾ cup white or red onion diced
¼ tsp dried tarragon
1 zucchini sliced thinly
1 cup cauliflower rice or mixed greens
Salt and pepper to taste
Optional: microgreens for garnish
DRESSING:
1 avocado
⅓ cup sour cream
⅓ cup parsley
1 tbsp olive oil
2 cloves of garlic
Salt and pepper, to taste
Instructions:
Preheat oven to 400°
Slice zucchini thinly and set aside
Roast tomatoes in the oven for 10-12 minutes, until soft and slightly charred.
Heat 1 tbsp olive oil in a skillet and add sliced halloumi.
Fry halloumi until both sides are golden brown; set aside.
In the same pan, add 1 tbsp olive oil, onion and tarragon and cook until onions are slightly translucent
For the dressing: Put avocado, sour cream, garlic cloves, olive oil and salt and pepper in a food processor and mix until well combined.
Top cauliflower rice or mixed greens with zucchini, tomatoes, onions and halloumi
Spread the avocado dressing on the sides of the bowl and top with microgreens
